Menu plans


Here's the menu for the next two weeks!

Menu

Sundaygrilled rib eye steak with onion blue cheese sauce and salad (this is delicious and incredibly rich. I recommend using half and half rather than straight heavy cream)

Monday—eggs and toast (keepin it simple)

Tuesday— Valentine’s Day! Pasta with tomato-blue cheese sauce and red velvet cupcakes (one of my favorite PW pasta recipes! love adding the spinach at the end, delish!)

Wednesday—leftovers

Thursday—leftovers

Friday/Saturday—out

SundayBBQ pizza (I love this easy recipe and just use premade whole wheat crust that I roll out)

Monday— pasta Bolognese with mushrooms  (WW recipe so I can't link it but this one looks fairly similar)

Tuesday—onion sandwiches (So to make this I use toasted rye bread, 1 granny smith apple thinly sliced, and an herbed soft cheese like brie spread on the bread. For the onion, cut it into thin slices, place in a pan over medium/high heat, drizzle with olive oil and stir around until they become translucent. Then add 1 Tbsp of balsamic vinegar and a pinch or two of sugar and mix it all together. Then I put the onions between the bread and enjoy!)

Menu plans


So my friend and running partner Ashley put her menu up on her blog and I wanted to copy. Because that is one less menu I have to worry about! I do two week menu's so here's what we've been eating this week and what the plan is for next week. This week wasn't so much the healthiest FYI... and I only really cook Sunday/Monday/Tuesday because I'm generally working Wednesday and Thursday night so we both eat leftovers and we tend to eat out on Friday and Saturday or again eat leftovers. I also always have eggs and toast on hand or canned soup, things like that that we can eat if I happen to be home one of the days we eat leftovers or if we don't feel like leftovers.

Sunday—tomato basil parmesan soup with salad and French bread


Monday—Trader Joe's orange chicken and whole wheat couscous (I tend to keep a stash of frozen TJ foods in the freezer for when I'm lazy planning the menu, which happened this weekend)

Tuesdaysimply sesame noodles with shrimp, if we were trying to be a little healthy, I'd say eat some carrots or toss in some stir fry veggies

Thursday—leftovers

Friday/Saturday—out/leftovers

Sunday— SUPER BOWL—asian flank steak skewers and whatever other goodies friends bring

Mondaytortellini in brodo with salad and home made bread of some sort (I'm a little into soups presently)

Tuesdayquinoa salad with black beans, avocado, cumin-lime dressing (straight up stole this from Ashley--see menu sharing is awesome!)

9/11 Memorial

I know I haven't actually written here in a while. Just plastering my pretend awesome photos. But the memorial makes you think so let's see what happens here...

After wandering around in the cold all day and eating yummy Italian, we went to check out the 9/11 memorial.
It was frigid, but that also meant not a lot of people which was nice.
The feeling there is sorrow and emptiness. I think the waterfalls and the largeness of it all promotes that feeling, at least in the dead winter it seemed like it. I didn't know anyone who was in the towers or flights or anything. I didn't even know what the Wold Trade Center was when I heard the announcement on the radio coming home from Seminary that morning.
But this action, this thing has affected everyone in our county, and you can feel that deeply there.
Those two pits are huge and covered with names. The saddest one being a woman's name and her unborn child. So many futures gone.
It made me wonder if this place eventually have the same feelings like the memorials in DC? When we went to those I felt a sense of pride and gratitude for the sacrifices made. Or will it always feel like sorrow and emptiness at this memorial because it's the result of something done to us rather than being proactive Americans?

I am glad that there is a place to remember the people who were killed so tragically. And I'm extremely grateful to live in this country even if I don't always agree with the politics or think it's being managed in the best way possible.
This is a blessed county. There are so many miracles that had to happen for it's creation to be possible. And I'm happy that those miracles did happen.

5th Ave

Of course while the parents were here we had to walk down 5th Ave. My favorite windows each year are Bergdorf Goodman's. They are always so amazingly whimsical and beautiful. I wish I could jump into them like Alice in Wonderland.




Then we stopped at Tiffany's so mom could get a little somethin' somethin'. It's a tradition you know.
Then we went to see the Tree.  Tree with a capital T because are there any others?
Tender times!
There was lots of subway-ing happening over the week.
Unfortunately this day of walking around everywhere was also the coldest day while my parents were here.
Later that day we went to our favorite Italian place. And then went to visit the 9/11 Memorial.

Running my bridge

After Christmas, my parents came back to NYC with us and stayed for almost a week. It was fantastically family filled. Of course we went running across my bridge. They were thoroughly impressed by my running into the wind skills.

We also went running in Central Park one day and I was able to take off my sweatshirt and run in a t-shirt it was so incredibly warm! Crazy NYC!

The Nephew Turns 4

While we were in NC, we got both our families together for a lunch and celebrated the nephew's 4th Birthday. He climbed up into the fancy chair and posed for pictures.

Then he tore into the presents.

Dan found a Captain America mask and shield for the boy. I don't think the mask went over well but the shield was pretty sweet.

It was good times.
