
After the adventure we had on Saturday afternoon, I knew that night we'd need some serious comfort food. Meaning grilled cheese and tomato soup! This is scrumtralescent comfort food, but I like to give it a bit of flair if ya know what I mean? I switch up what I put in my grilled cheese depending on what's in the fridge but this time I used sharp cheddar, some blue cheese crumbles, spread on a bit of herbed brie and a couple of slices of tomatos. I also love putting on some pesto if I have it. This one had so many strong flavors and the brie already had herbs and such mixed in so I didn't add the pesto. The blue cheese I thought was amazing and added a nice sharpness. Then I just heated up some tomato soup (made with milk, not water of course) and sprinkled some of my good parmesan cheese on top. I like serving my soup in mugs. It's much easier to eat it like that when you're lasy like us and you're eating on the couch!
