Meatloaf cupcakes with Mashed Potato Frosting
I got this recipe from here. These are really yummy and relatively easy. I'd think kids would like them and find them entertaining. Cause really?! It's a cupcake? It's dinner? What?!

I really love this mashed potato recipe too! Boiling the garlic with the potatoes? And then just mixing it all together? Easy!
Oh yum
We had them with a salad. Easy and quick dinner.

That's how I make my mashed potatoes! And I made SO MANY meatloaf cupcakes when I was in Chicago - totally a perfect serving size for dinner. But I never thought of putting them together!
