Attack of the cookie!

This recipe may be a little extra work, but I PROMISE you that you will never be able to make another chocolate chip cookie in your life. I found it on some random blog I was stalking. It's from the show America's Test Kitchen. You have to join (submit an email address) to see the original recipe, but I've found it's kind of worth it for the amazing recipes contained therein. Find original recipe here with extra tips and tricks to make them super duper yummy. (and P.S. I used a non-stick skillet and found it to be pretty dang easy to tell when the butter was browning). Now go and make these and try not to die when you take your first warm gooey bite!

Perfect Chocolate Chip Cookies

Avoid using a nonstick skillet to brown the butter; the dark color of the nonstick coating makes it difficult to gauge when the butter is browned. Use fresh, moist brown sugar instead of hardened brown sugar, which will make the cookies dry. This recipe works with light brown sugar, but the cookies will be less full-flavored. Makes 16 cookies
1 3/4 cups unbleached all-purpose flour (8 3/4 ounces)
1/2 teaspoon baking soda
14 tablespoons unsalted butter (1 3/4 sticks)
1/2 cup granulated sugar (3 1/2 ounces)
3/4 cups packed dark brown sugar (5 1/4 ounces) (see note)
1 teaspoon table salt
2 teaspoons vanilla extract
1 large egg
1 large egg yolk
1 1/4 cups semisweet chocolate chips or chunks (see note)
3/4 cup chopped pecan or walnuts, toasted (optional)

1. Adjust oven rack to middle position and heat oven to 375 degrees. Line 2 large (18- by 12-inch) baking sheets with parchment paper. Whisk flour and baking soda together in medium bowl; set aside.

2. Heat 10 tablespoons butter in 10-inch skillet over medium-high heat until melted, about 2 minutes. Continue cooking, swirling pan constantly until butter is dark golden brown and has nutty aroma, 1 to 3 minutes. Remove skillet from heat and, using heatproof spatula, transfer browned butter to large heatproof bowl. Stir remaining 4 tablespoons butter into hot butter until completely melted.

3. Add both sugars, salt, and vanilla to bowl with butter and whisk until fully incorporated. Add egg and yolk and whisk until mixture is smooth with no sugar lumps remaining, about 30 seconds. Let mixture stand 3 minutes, then whisk for 30 seconds. Repeat process of resting and whisking 2 more times until mixture is thick, smooth, and shiny. Using rubber spatula or wooden spoon, stir in flour mixture until just combined, about 1 minute. Stir in chocolate chips and nuts (if using), giving dough final stir to ensure no flour pockets remain.

4. Divide dough into 16 portions, each about 3 tablespoons (or use #24 cookie scoop). Arrange 2 inches apart on prepared baking sheets, 8 dough balls per sheet. (Smaller baking sheets can be used, but will require 3 batches.)

5. Bake cookies 1 tray at a time until cookies are golden brown and still puffy, and edges have begun to set but centers are still soft, 10 to 14 minutes, rotating baking sheet halfway through baking. Transfer baking sheet to wire rack; cool cookies completely before serving.

Pesto Pizza

Wanna know how to make this uber easy and not very attractive but oh so tasty pizza?
Cause I'll tell you. It's one of my quick meals actually. I take about 30 min total, that's including making the dough. Why? Cause I use cheats of course!
Jarred pesto, add water pizza crust (permanently .99 at my grocery store=in love!), some tomatoes, skim mozzarella, and a little bit of Parmesan (the good stuff if you have it on hand). You start with the crust, mix in the water and let it sit a bit. While it sits, you cut up your tomatoes and start slicing the queso (cheese). You then knead out the dough (I do it on a silpat so I just lift the whole thing onto my pan) and you can try and make it look pretty, I'm more of it's what's on the inside that counts kind of person as evidenced by my earlier photo ; ) Put down some pesto (I put too much on this one so it was a bit soggy, with pizza sauce, you never need as much as you think), then mozzarella, tomatoes and sprinkle a bit of parmesan on top. Bake for about 8-12 min depending on how crispy you like it!

5 minute chocolate cake

It's a problem. My sweet tooth, it gets out of control sometimes. While organizing my cook book binder the other night I finally paid attention to this little thing my grandma had put in it before giving it to me.
Can you read that? Yeah it says 5 minute chocolate cake.
Did I make it in a desperate attempt to get some sweet chocolate in my mouth as quickly as possible? Why yes, yes I did.
Here it is fresh out of the ove... microwave! (um if you happen to make this, please learn from my mistake and do NOT under ANY circumstances grab the handle of the mug with a bare hand. You will scream in agony and your husband will wonder what you've gotten yourself into this time.)
Oh goodness!

Analysis: pretty good, if you've got no sweets and a real hankering for some chocolate cake. The texture is different (probably on account of being "baked" in a microwave), and I thought it was a bit eggy (maybe use just the yolk or white?) and it needed more chocolate so probably do heaping spoonfulls of that stuff. I had some left over cream cheese cinamon frosting which I put on and made the whole thing pretty amazing. Dan even liked it (and he's not a sweets man).

Microwaves just got better.

With his HEPA media filter, helix dirt separation system, 12 amp bagless upright wonderfulness?!
Look at what he did to my 2 months without a real vacuum carpets. Isn't he just divine!?
After two goes I already had to clean him out my carpets were so bad! Sorry to anyone who has put their feet on our nasty floors in the past few months. But with this new bad boy in town... woo wee! Dan's got some competition!

Wa bam!!

This my friends is General Tso's Chicken. You know what's so special about this General Tso's chicken? I MADE it!!!!!! It totally looks like take out chinese right? And it totally tasted like take out chinese! The recipe is fairly easy, and doesn't require any super random ingredients. That's why I decided to try it out. It takes a while, but I think with practice, it won't be as time consuming. And I think I could prep the sauce in the morning or the night before and then reheat it to cut down on time. FYI, 2 tsp of chili peppers is waaaay too spicy for me. I did 1.5 tsp and it was still too spicy for me but perfect for Mr. Thomson. So watch out. Anyways, I know there have been a lot of food posts this week, but I've been really proud of what I've been making!

The other night Dan said, "you fooled me! I was pretty resigned to the fact that you weren't a big cooking person and I was just going to have pb&j's for the rest of my life. But now look at you! Cooking up a storm!" According to him he'd be on campus at BYU studying til late and I'd bribe him to come over with dinner ready and when he'd show up there'd be two pb&j's and a tall glass of milk waiting for him (I'd like to declare however, that my peanut butter to jelly ratio is really excellent). I had to make sure he loved me for me first and then the cooking!*

*I actually didn't like to cook until we got married... so he did just get lucky : )

On living with Dan

As Dan saw the title of this post and the picture below he chuckled and said "well, you gotta be on your toes." How right you are Dan, how right you are.
Saturday while taking a shower, I heard Dan yell, "Guess what else I got at ESPN Deportes?!" That's when a blow up soccer ball was launched into the shower on my head. He promptly walked away while I yelled at him to come and take his dang ball back. I left the ball in the shower for him to discover when he next tried to clean up. Kinda difficult when you have spray coming up from hitting an inflatable soccer ball.
So he does these things to keep me on my toes, but he also knows exactly how to pick me up. I found this when I woke up one morning a couple weeks ago when I was having a rough time with work. I particularly liked the way he used the word "a**." Sometimes a well placed swear word just makes you feel better. And it did : )

I sure do love Dapper Dan Man!

Happy St. Patrick's Day!

At church on Sunday we had a green themed potluck for St. Patrick's day. I found an easy looking cookie recipe and tried it out. I think it turned out pretty well and it really was super easy. You get one of those sugar cookie pre-mixes in the baking aisle and make the dough. You make the dough and divide it in half. One half becomes chocolate and the other becomes green with mint flavoring. You roll out each half and then you put the green on top of the chocolate and roll it out some more. Roll it up tight and wrap it in wax paper. Stick it in the freeze until nice and firm.
Then you just cut it into slices and put the slices on the baking sheet
It's like a tube cookie, so super easy. I like making these and just keeping them in my freezer for when random guests come over or I want something sweet, but don't want to really make anything.
All ready to go in the oven!
Yum! They turned out really nice I think. Make sure that the chocolate and mint ratio is good or else if you have some that are more mint than chocolate your husband will tell you they tast like toothpaste. So sweet right?

gourmet grilled cheese

After the adventure we had on Saturday afternoon, I knew that night we'd need some serious comfort food. Meaning grilled cheese and tomato soup! This is scrumtralescent comfort food, but I like to give it a bit of flair if ya know what I mean? I switch up what I put in my grilled cheese depending on what's in the fridge but this time I used sharp cheddar, some blue cheese crumbles, spread on a bit of herbed brie and a couple of slices of tomatos. I also love putting on some pesto if I have it. This one had so many strong flavors and the brie already had herbs and such mixed in so I didn't add the pesto. The blue cheese I thought was amazing and added a nice sharpness. Then I just heated up some tomato soup (made with milk, not water of course) and sprinkled some of my good parmesan cheese on top. I like serving my soup in mugs. It's much easier to eat it like that when you're lasy like us and you're eating on the couch!

Crazy Weather!

This weekend starting on Friday afternoon, we had absolutely nutso weather! The problem was the combination of sucky weather. It's one thing if it's raining or windy, but to have both together? Que terrible! While it was in the 40's so not too cold, the wind was at 25mph with rain. Not a ton of rain, but it was definitely wet! It's the kind of weather where you can't use an umbrella (as evidenced in the photo below). When the wind is that intense, you're just going to end up with a mangled piece of wire and material.
I think there are about 4 umbrellas in that trash can? What do you think?

On Saturday we decided we should probably get out of the apartment at least once and to quote Mr. Thomson "It's probably not that bad outside. It just sounds bad because we're up high and on a corner, ya know?" Ooooookay Mr. Thomson, I'll trust you!

We walked down about 9 blocks to go to Subway for lunch. Very windy, but not too bad because the wind was helping us on our way. We go to the grocery store to pick up a few things while we're out. Hmmmm is it just me or is it starting to rain more? We leave the grocery store. WTF!? It feels like hurricane weather! We walk back (uphill no less) to the apartment 9 blocks and by the time we got home our pants/coats/hats/gloves were completely soaked because we didn't bring umbrellas due to the wind (they wouldn't have helped anyways).

Dinner time!

One of my current favorite quick dinners is salmon burgers. Last time we went to Costco I just got a thing of salmon patties and now I have a quick seriously take 10 minutes to make dinner. If you're doing it the least healthy way (my way!) you fry each side for 3-4 min in a little bit of oil. Now while those are going you cut up some tomatoes, rinse the lettuce, cut up some red onion and mix some mayo with some pesto if you've got it (if not mayo and Dijon mustard go really well too). You put the patties on a plate with paper towels to drain and then toast the buns in the left over oil (dump some out if there's a lot) and then you're ready to go!

Seriously 10 minutes total, and they're salmon, so it's a little healthier right???? : ) Soooo good! Go try!

Cupcake Addiction

Lately I've been a little obsessed with cupcakes. Every time I need to make a treat for something or I'm just in the mood to bake, I'm making cupcakes. I like to think it's because they're so much easier to transport than a big heavy cake...and they're cute! Who doesn't like to have their own personal little cake to eat?
I think the Duncan Hines dark chocolate or fudge chocolate is my new favorite box cake. It makes a really yummy rich, moist chocolatey cake. I made these for a Red themed church potluck. Too bad it takes waaay too many drops of food coloring to make white frosting actually red, so they got pink frosting.
Now these bad boys are super dense and absolutely perfect. I got the recipe from here and just make cupcakes instead of the big cake. The apple chunks make it amazing and they're so dense and full of yummy apple spice. I almost feel like it wouldn't be soo bad to have one for breakfast because you know, the apple and the flour and the cream cheese... those are okay things right? you could almost make a bagel out of those? : )

Anyways you should try the apple spice cake. It's really easy and pretty forgiving while turning out delish!

Dan's Life

What did Dan do all evening long this Saturday? He played 40 races on Mario Cart and won the "cup" (I don't really know what that means). But he was very proud of the fact that 39/40 races he came in first. That would be his Mii in the center basking in the glory of being number 1.

Oh Dan, a girl couldn't be more proud of her hombre! : )

Rachel's visit

Last weekend my wonderful amiga Rachel came down from RI to visit Dan and I last weekend. We realized that we hadn't seen each other since the reception in September, so we were definitely due for a visit.

We'd just had the big snow storm that Thursday and Friday morning so I was hoping her bus would actually make it. She made it early! Nobody was on the roads thinking they were still horrible, which ended up being great for her. Saturday we went and saw a movie, and then went to the Peanut Butter shop. I thought Rachel would enjoy it as I know she adores her peanut butter.
The shop was crowded so went went and ate on the one park bench in Washington Square park that wasn't covered in snow. Rachel with the yummy pb&j. We also had a pb and nutella sandwich (which is what our Senora in Spain would pack in our lunches for dessert. yum!).

Saturday was a wander around the city and just generally spend time together kind of day, which is exactly what I needed. That night we all tried out a restaurant in Inwood next to our church building. It's called Mamasushi and they serve sushi with a Dominican twist. It's not the best sushi, the rice has little flavor and I never use dipping sauces on my sushi but I used a lot with this stuff. However, it was fun, it's a cute little place and the sushi was different. One of the rolls had plantains on top and salami inside, so just that little Dominican twist which makes it more interesting. The thing that might bring Dan and I back is that Monday-Wednesday during happy hour it's $22 for unlimited sushi. That might just make it worth it!

It was a nice visit with my Raquelita. I forget sometimes how nice it is to spend time with someone who's known you for so long and knows how ridiculous you are and still loves you : ) Thanks for coming and playing with us Rachel! We love you!

la vida loca

Work has been nut-so this week. Monday we were told we have an additional supervisor, Tuesday night our original supervisor was let go, Wednesday morning we had a crazy staff meeting regarding all of the changes, I had to work long days Monday, Tuesday and Wednesday and I've worked with a new family every single day this week=drama drama drama!

I've gotten into a bit of a funk and haven't wanted to talk or write or acknowledge how incredibly frustrated and hopeless I've felt at work and with work. I'm still not feeling the same hope and excitement I did when I first started, but I felt a little tiny flicker of hope on Wednesday after the changes. I'm frustrated with the changes, and I still don't know if they bode well, but I'm hoping that maybe I'll get to be the therapist I want to be rather than the hodge podge of 5 other roles I felt like I was doing.

Now I just have to wait and see what happens.

Waiting sucks.
