Cupcake Addiction

Lately I've been a little obsessed with cupcakes. Every time I need to make a treat for something or I'm just in the mood to bake, I'm making cupcakes. I like to think it's because they're so much easier to transport than a big heavy cake...and they're cute! Who doesn't like to have their own personal little cake to eat?
I think the Duncan Hines dark chocolate or fudge chocolate is my new favorite box cake. It makes a really yummy rich, moist chocolatey cake. I made these for a Red themed church potluck. Too bad it takes waaay too many drops of food coloring to make white frosting actually red, so they got pink frosting.
Now these bad boys are super dense and absolutely perfect. I got the recipe from here and just make cupcakes instead of the big cake. The apple chunks make it amazing and they're so dense and full of yummy apple spice. I almost feel like it wouldn't be soo bad to have one for breakfast because you know, the apple and the flour and the cream cheese... those are okay things right? you could almost make a bagel out of those? : )

Anyways you should try the apple spice cake. It's really easy and pretty forgiving while turning out delish!
